The first three nights in December are certain to tickle the fancies of fine dining foodies, when MGM Resorts hosts a trio of chef-hosted dinners at PRIME Steakhouse at Bellagio (Thursday, December 01) and Jean Georges Steakhouse at ARIA (Friday, December 02) by Chef Jean-Georges Vongerichten; and at BARDOT Brasserie at ARIA (Saturday, December 03) by Chef Michael Mina.

These experiential dinners at both chefs’ acclaimed, award-winning signature restaurants will feature highly curated, seasonally-focused menus, that have been expertly paired with wines and spirits from some of the world’s most coveted producers, and will be enjoyed by guests in these restaurants’ beautifully appointed dining rooms.

Thursday, December 01: PRIME STEAKHOUSE at Bellagio

Chef Jean-Georges Vongerichten, in partnership with Hundred Acre Winery, will host a grand dinner on Thursday, December 01 at PRIME Steakhouse overlooking the famed Fountains of Bellagio. The evening’s menu will highlight seasonal ingredients elegantly prepared by the world-renowned chef, along with specially-curated, rare wine selections from Hundred Acre Winery, known for delivering opulent wines which consistently score high with wine critics and major industry publications, alike.

This exclusive dining experience will feature:

  • Welcome Toast
    • Dom Pérignon Vintage 2021
  • Caviar Beggar’s Purse: Ossetra Caviar & Crème Fraiche
    • Pairing: Hundred Acre Summer Dreams “Walking on Venice Beach” Sauvignon Blanc 2021
  • Mushroom Carpaccio: Matsutake & Black Trumpet Mushrooms with aged sherry vinegar
    • Pairing: Hundred Acre “Ancient Way” Shiraz 2006
  • A5 Wagyu Tenderloin: Peppercorn crusted with a black truffle jus alongside potato gnocchi
    • Pairings: Hundred Acre “Morgan’s Way” Cabernet Sauvignon 2019 and Hundred Acre “Ark” Cabernet Sauvignon 2019
  • Peanut, Banana & Chocolate Tart: Presented with chewy caramel and chocolate ice cream

Chef Jean-Georges Vongerichten, in collaboration with Louis XIII de Rémy Martin, will host an extravagant dinner on Friday, December 02 at 7pm, at Jean-Georges Steakhouse at ARIA. Considered one of the world’s most renowned and cherished spirits, Louis XIII is made with a blend of up to 1,200 different Eaux de vie that range in age from 40 to over 100 years, making it an extremely rare offering. 

This exquisite pairing menu will feature:

  • Caviar Bubble Tea handmade with almond milk and dill
    • Pairing: Champagne Telmont, Reserve Brut, NV
  • Norwegian King Crab Salad prepared with Asian pear, Russian dressing, and onion rings
    • Pairing: The Botanist, French 75
  • Pepper Crusted F1 Japanese Filet Mignon served alongside crackling sweet potatoes, broccoli rabe, and green chili-garlic emulsion
    • Pairing: Rémy XO Old Fashioned
  • Passion Fruit Pavlova made with passion fruit sorbet and served alongside caramelized banana cookies

Saturday, December 03: BARDOT BRASSERIE at ARIA

Chef Michael Mina, in conjunction with Moët Hennessey, will host a lively dinner on Saturday, December 03 at 7pm, at BARDOT Brasserie at ARIA. The wines and Champagnes of the Moët Hennessey portfolio are known for being hand-curated and expertly sourced statement beverages for celebrating memorable moments or any occasion. 

This exceptional dinner will feature:

  • Foie Gras Éclair with black pepper pâte à choux
    • Pairing: Dom Pérignon Cocktail
  • Caviar French “Parfait” with dill fleurette, egg mimosa, bordelaise onions, and MINA Reserve Caviar
    • Pairing: Dom Pérignon Vintage 2012
  • Lobster Thermidor with truffled cognac béchamel, parmesan breadcrumbs, and fine herbs
