Tucked deep in the recesses of Wynn Las Vegas is La Cave Wine and Food Hideaway (imagine a treehouse in Marrakech designed by India Hicks, and you’ve got the vibe).

One of my favorite aspects of La Cave is the way Executive Chef Billy DeMarco is always experimenting with fresh seasonal ingredients, sending new and exciting dishes, from his kitchen cum laboratory.

For Winter 2013, Chef DeMarco has gone for a stick-to-your-bones approach, that is reflected in such hearty entrées as Roasted Salmon with green beans, olives, and pine nuts; Certified Black Angus Sirloin Steak garnished with mushroom fondue; Angus Mini-Burgers topped with sweet onion marmalade; and Airline Chicken Breast covered with squash puree and tomato apricot chutney. 

There’s also a sensational Truffle Roasted Potato appetizer; while those with a sweet-tooth are able to bite into a Chocolate Cake layered with mascarpone cream and served with fresh strawberries and caramel sauce. 

Not to be outdone by their compadres in the kitchen, the mixologists of La Cave have whipped-up a slew of new cocktails. Live it up with such libations as the Bourbon Cider (Evan Williams apple, pomegranate, and cherry liqueur), the Pumpkin PieTini (Amaretto DiSaronno, pumpkin pie liqueur, spiced rum, and vanilla), the Espresso l’Orange (Van Gogh Double Espresso Vodka, espresso liqueur, Cointreau, cream, and fresh muddled oranges), and the Filthy Cocoa (Cîroc Amaretto Vodka, filthy cherries, brown cacao, and cream).

Proprietors Jenna & Michael Morton like to keep things fresh; and entering its fourth year, La Cave Wine and Food Hideaway is just as swanky now as when it opened, in 2010.
